Masa, a local delicacy made from rice, is not only a cultural staple but also a powerhouse of nutrients when prepared with unrefined rice.
Masa is traditionally prepared by fermenting local rice |
Fermentation introduces probiotics into the gut. These bacteria help break down food more efficiently, making nutrients easier for the body to absorb improve bowel movement. They compete with “bad” bacteria for space in the gut, preventing infections and sickness.
"When you have a good number of probiotics in your gut, it promotes your mental health", says Dietician Dr. Maxwell Bisala Konlan. He further explains.
In terms of fertility, folate plays a key role for both men and women. Folate (vitamin B9) is a vital nutrient found in unrefined rice. For women, it improves egg quality, supports regular ovulation, and reduces the risk of birth defects in early pregnancy. For men, it enhances sperm count, motility, and DNA stability. By ensuring healthy cell division and protecting genetic material, folate promotes overall reproductive health and increases the chances of successful conception.

Onions added in the preparation process contribute health benefits |
Rice, especially when unrefined, is rich in carbohydrates. Carbohydrates are broken down into glucose, which serves as the body’s main fuel. This provides strength for daily activities, brain function, and muscle movement.
The oil used in frying masa contributes significantly to energy. Fats provide more than double the energy of carbohydrates. Sunflower, soybean, or canola oils may also provide omega-3 and omega-6 fatty acids, which not only supply energy but also help reduce cholesterol.
